Suitable for home freezing

To maximise freshness put the raw barramundi straight into the freezer on arrival. Defrost overnight in the fridge or when needed in a couple of minutes in the microwave.

How to Cook Print

Stovetop
1. Dry & season Barramundi. Fry chorizo & barramundi in 1 tbsp of oil. (4 mins per side, start skin side down)
2. Season and add 1 tbsp of water to tray of veggies. Microwave with pot of smokey sauce (lid on loosely). 3-4 mins. (Alternatively fry veggies in pan)
3. Serve barramundi on bed of sauce & veggies.

Microwave
1. Dry & season barramundi. Add chorizo to smokey sauce pot.
2. Place barramundi on tray of veggies and plastic wrap.
3. Microwave tray & sauce pot (lid on loosely) 5- 6 mins until pipping hot.
4. Serve barramundi on bed of sauce & veggies.

(After cooking you can easily peel off skin if you prefer a skin less barramundi).

Cooking tip

  • For best results when stovetop cooking, use a non-stick frying pan to prevent barramundi fillets from sticking.
  • Our Barramundi fillets are hand-cut so cooking time may vary. You can check your barramundi is cooked by ensuring it reaches 145F.

Never caramelized!

I just cooked this meal and it was delicious. However, the chorizo never caramelized. I cooked it with the cod as directed and it remained in cubed form. So I then put the cubes into the smokey sauce and cooked for another 5 min. It remained firm cubes. What did I do wrong???
It was very good but I feel it would have been even better if I could have caramelized the chorizo. I fell the directions were in error.

Outta this world…!!!

This is a dish I would expect to see on the menu at Le Bernardin and I would order it too. The only difference between G&T’s version and Chef Ripert’s would be the price, his being probably twice as much! As light, flaky and flavorful as the cod itself is, the caramelized chorizo adds a bold and unexpected bit of bite to the dish. The smokey and spicy tomato and chickpea sauce compliments both proteins and the fresh vegetables that are included. I added thin, diagonally cut carrots to the veggie medley and it was a perfect addition. This meal is both light AND hearty…absolutely delicious!!

Wow, this got a lot spicier!

We've had this a few times, gave it a thumbs up on our (very short) preferences list. But tonight I made it again and the sauce was so hot we couldn't eat it. We remember the sauce being smoky, as described. Tonight, no discernable smoke flavor, just hot, Hot, HOT!

We couldn't eat most of it, 'cause our mouths were on fire. We've taken it off our preferences list.

Good-but not the best we have had so far

This was interesting-good flavors, but it seemed an odd mix at times. The cod was great. Good dish-but wouldn't order this one again. I appreciate the creativity with the combo-just not for us. Thanks!
